In West Africa Garri is any ife and koladepowdery material, especially foodstuff, such as flour grains, e.g., garin dawa (guinea cornflour), garin masara (maize flour), and garin sukkhari (sugar), and particularly fried tapioca/cassava. Flour foodstuffs mixed with water used to be a major part of the diet in the Hausa lands and almost all parts of Nigeria, Ghana, Cameroon and Liberia.
In West Africa,the two types are white and yellow. Yellow garri is prepared by frying in palm oil; white garri is fried without palm oil.

The process to make garri from fresh cassava
To make garri , cassava tubers are peeled, washed and grated or crushed to produce a mash. The mash can be mixed with palm oil (oil garri) and placed in a porous bag, which is then placed in an adjustable press machine for 1–3 hours to remove excess water. Once dried it is then sieved and fried in a large clay frying pot with or without palm oil. The resulting dry granular garri can be stored for long periods. It may be pounded or ground to make a fine flour. The automatic processing flow is : washing and peeling--crushing/grinding--(fermentation) dewatering--(mixing with palm oil)--frying--sieving--packing&sealing.
